Potassium sorbate is the potassium salt of sorbic acid, effective against yeasts, moulds, and some bacteria. Most effective at pH below 6.5. Often combined with sodium benzoate or phenoxyethanol for broader spectrum preservation. Considered a mild preservative and is commonly used in natural and organic formulations.
