Also known as: Benzoate of Soda

Sodium benzoate is the sodium salt of benzoic acid, effective against yeasts and moulds. It is most effective at pH below 4.5, making it suitable for acidic formulations. When combined with ascorbic acid (vitamin C) in the presence of metal ions, it can form benzene, a known carcinogen. This combination should be avoided in formulations.
